In this hands-on 3 hour class, students will learn to mix a sourdough focaccia by hand- no machine, no equipment.

In this class you will learn:

  • How to incorporate whole grain into the dough.
  • Mixing method and techniques.
  • How to use freshly-milled flour in focaccia.
  • Folding techniques for long and slow fermentation.
  • How to top and bake focaccia.

You will leave this class with:

  • Sourdough starter 
  • Recipe booklet 
  • Products baked in class
  • Dough mixed in class

After the class, enjoy light snacks featuring our freshly baked focaccia paired with local market offerings. 

All ingredients and equipment are provided in the class, as well as the apron and hairnet. 

Due to the workshop being held in a compact microbakery space, spots are limited. Depending on the pace of the class, the workshop may run longer than expected
